Cumin (Cuminum Cyminum) is a widely used spice in Indian, Mid Eastern, North African and Mexican cooking. It has a pungent warm flavor. Cumin is a seed from a low growing bush. Physically the seed resembles Caraway though the flavor is quite different. Cumin is an important spice in Couscous dishes from North Africa, it also blends well with certain cheeses and is an important ingredient in refried beans and other Mexican dishes.
Suggested Use:
Cumin is used in many ethnic cuisines, especially Estern Indian, Mexican and Southwest American dishes. Use it to make your own Indian Masala or Curry Blends. Combine cummin with ground Dried Chile Peppers to season chili or enchiladas.

Basic Prep:
Cumin is best when ground immediately prior to use. To grind, use a pepper mill, electric spice grinder, or mortar and pestle. Store Leftover Ground Cumin in an airtight glass jar.
