Pequins are small, oval shaped chiles (Capsicum frutescens) with tapered ends. The color of a dried Pequin is an orange-red. They often grow wild in the mountains of Mexico. This chile measures 1/2 inch in length and is only 1/4 of an inch wide. The flavor is hot, with sweet and citrus undertones. On the heat scale, this little chile ranks an 8.5.Scoville heat units 40,000 - 50,000.
Suggested Use:
Pequin Chiles are very hot A little goes a long way. Use Pequins to heat up Pasta Diablo, with shrimp or lobster added. If you love hot chili, salsa and stews, this is the chile for you.
Ingredients:
Dried Pequin Chiles.
Basic Prep:
Rinse product first with warm water. soak in hot water for 10 minutes to rehydrate or add directly to recipe that will cook at least 10 minutes. Once rehydrated, dice or puree and add to a recipe.
